As I've mentioned in previous posts, many people celebrate Lent by going meatless on Fridays, so I have been suggesting meatless dinners that might be fun for the whole family. Comfort food dinners, so the same dinner that takes away meat adds something good. Well, I have always loved breakfast for dinner! So I wanted to suggest that at least one week, as Lent comes to a close, or anytime you want to add comfort, you consider breakfast for dinner. French toast, pancakes, bacon - there are so many choices. But if you're wanting healthier comfort food in your breakfast-for-dinner meal, read on... I love breakfast for dinner! My favorite is making vegetable omelettes. They are not only quick, easy and inexpensive meal, they are delicious! Tomorrow we're having egg salad sandwiches on hot dog rolls! When we get a package of rolls for hot dogs, we always end up with left over rolls so I plan sandwiches the following day to use them up! The video looks delicious!

Nicely done video but I probably wouldn't eat that. I would like to try to make a fritatta, however!!! Breakfast for dinner is always yummy!

Love breakfast for dinner. You inspired me to think out of the box. I've been watching YouTube videos looking for vegan replacements for eggs and I've been playing around with tofu, amazed at how versatile it is. There's an Indian salt called Kala Namak that tastes exactly like eggs. The other day I used that salt on crumbled tofu seasoned with red onions, celery and vegan mayo and Bam! I had myself some amazing 'egg' salad.

Oh, that sounds great! A way to enjoy vegan "eggs." I am vegetarian and do that with veggie burgers.
